Welcome to Restored Culinary Therapy and Consulting. I am a professionally trained chef with a passion for helping you enjoy food to the fullest!
If you are on a special diet, working with a dietician, or want to learn more about eating healthy I can teach you a greater understanding of cooking techniques! I specialize in breaking down barriers around food so you can feel and live a healthier life style.

Meet Lance

Even at the young age of three, I began to have an interest in making food. I can remember watching Martin Yan and Julia Child in my grandparent’s kitchen and thoroughly enjoying it. Growing up with a large family provided many opportunities to plant seeds of culinary passion and hospitality.
This passion grows every step of my career. Understanding the significance of a quality education and training, I have earned my bachelor degree in Hospitality Management from the California Polytechnic State University of Pomona and certified in culinary arts by the Culinary Institute of America.

My work experience has taken me through a major restaurant chain, private cooking, catering professionally and privately. I have held positions from preparation cook, line cook, sous chef to demonstration chef. I’ve had the opportunity to open a restaurant, a café, a pop up concept and start a food service account for county health.​
My Journey to Restored
My favorite titles I hold are husband and father. I’ve been married to my amazing wife April since 2010. We have two children; Judah age 5 and Leila age 3. All three have shaped me into a better man. One challenge as both a father and chef is that Judah has some very specific needs. Some of those involve his diet and eating ability. Judah was placed on a ketogenic diet for seizure control at age 2. This is a difficult diet for a child with developmental delays to eat. Judah loves his food hot, and that does not pair well with high fat meals. As a chef, I found it a difficult challenge to appeal to my very picky client.

This created a drive to learn and help others that are trying to overcome hurdles related to food, cooking and eating.
I want to use my knowledge and skills to help better other people’s lives through food.

If you care for someone who is in need of more nutrition in their diet, someone who has difficulties with types of foods or textures, or are stuck and need new, healthy ideas then I would love to work with you.
While I do have expertise in food and nutrition, I am not a licensed healthcare professional and will work within parameters set forth by your healthcare professional in implementing diets for cardiac, vegetarian, diabetic/low glycemic, vegan, ketogenic, individual-specific, allergies and dairy or gluten free, sensitivities, aversions and more!
Professionals
If you work with people groups that have sensitivities to foods and malnutrition, but would like to expand your understanding of the cooking and eatability of food, I would love to partner with you and help you reach your goals.

Cooking can be a complicated process if you lack certain knowledge and experiences. I want to share with you what I have learned from years in the restaurant and hospitality industry. I've helped Executive Chefs and Food Scientists have a greater understanding of food.
Organizations
If you manage a food operation but need consulting on taking your kitchen to the next level, create a healthier but flavor packed menu, or learn new skills I can help.

We can work through menu and meal planning, shopping and budgeting, buying fresh ingredients, identifying and diversifying and more. I can also provide cooking classes and demonstrations covering culinary basics or cuisine-specific skills and recipes.
Consulting
$40 for each half hour.
$150 for 2 hours.
Travel Fees: $25 for 50 miles round trip or $50 for 100 miles round trip.

Culinary Classes
Topics include Fundamentals, Focused Subject, or Cuisine Based.
Classes are 5 hours long. Each person makes one dish and the group makes a comprehensive menu.
Cost: $200/person min 4 people
Private Chef
If you would like to hire me to cook for you while you enjoy the evening or party - I can make it happen. Pricing starts at $400 minimum and includes three items, enough to satisfy 4-6 people. Packages are customizable to what you want and need. Tasting samples can be made at $50 per two people. Wine pairing can be added at an additional cost.
Cost: $200/person min 4 people
